What is the best wine to pair with your meal?

The old adage “red wine with meat, white wine with fish” is a good rule of thumb.  Pairing is about matching the main components of a dish and the main components of the wine. However, that does not always mean complementing. Sometimes, a contrasting style is ideal.  But, in general, think about the main dish’s dominant flavor, its character, intensity and the comparative level of its fats to acids. Then find a wine whose style will best showcase that dish.

However,  not all meals need to be paired perfectly, although I enjoy when I have a meal where the wine matches up perfectly with the food,  more often than not, I just pour myself a glass of wine that I want, and have it along with my meal, whether or not it falls within “the rules” of pairing.   For most of us,  most of the time, when we are eating a meal that we like and drinking a wine that we love, our enjoyment of both the wine and food will be good.  

Below are some tips for Wine and Food Pairing: 

  1. The wine should be more acidic than the food.

  2. The wine should be sweeter than the food.

  3. The wine should have the same flavor intensity as the food.

  4. Red wines pair best with bold flavored meats (e.g. red meat).

  5. White wines pair best with light-intensity meats (e.g. fish or chicken).

  6. Bitter wines (e.g. red wines) are best balanced with fat.

  7. It is better to match the wine with the sauce than with the meat.

  8. More often than not, White, Sparkling and Rosé wines create contrasting pairings.

  9. More often than not, Red wines will create congruent pairings.

1.      Sauvignon Blanc and Oysters

2.      Chardonnay and Lobster

3.      Sparkling Wine or Pinot Grigio and chips

4.      Sparkling Wine and Fried Chicken

5.      Spicy Foods and Riesling

6.      Pinot Noir and Rosted Pork

7.      Spaghetti and Chianti

8.      BBQ Chicken and Zinfandel

9.      Burgers and Merlot or a Red Blend

10.  Spice Rubbed Brisket and Syrah

11.  Cabernet and Steak

Bottom line is, drink what you want, with what you want.  However, you will find that when the food and wine are paired properly, it can elevate the enjoyment of your entire meal.
