The Shiraz / Cabernet is the "main" wine this month. This wine is excellent paired with food or just to drink on its own. I paired this with roasted pork chops and a white bean sun dried tomato gnocchi. You can make the chops anyway you want to, I pan roasted them in butter with fresh sage and rosemary with salt and pepper seasoning. The un-oaked Chardonnay with its expressive stone fruit, lemon and slight herbal overtones make this wine refreshing, crisp and perfect to drink with the herb, orzo white bean soup and Chicken Milanese. This wine is intense and has lots of dark fruit aromas and flavors. with a smoky undertone, which is typical of wines from the Barossa region in Australia. This wine will go well with anything on the grill, but with the fall season, I automatically think soup, stew and chili.
