Balsamic Apricot Pork Chops

INGREDIENTS:
  • 1/2 cup apricot OR blackberry preserves
  • 1/4 cup balsamic vinegar
  • 1/4 cup chicken OR vegetable stock
  • 1 large clove garlic, minced
  • 1/2 teaspoon dried thyme
  • 2 tsp dijon mustard
  • pinch red pepper flakes
  • 4 pork chops, bone in
  • kosher salt and freshly ground pepper
  • 2 tablespoons butter
DIRECTIONS: 
 
STEP 1: In small saucepan over med heat combine: preserves, vinegar, stock, garlic, thyme, mustard and red pepper flakes, bring to a boil.  Reduce heat and simmer until sauce is thickened. 
STEP 2: Preheat oven to 375. Pat chops dry with a paper towel and season generously on both sides with salt and pepper. Heat butter in a large cast iron pan over medium-high until melted. Add chops and sear on both sides.  Put pan into oven to finish cooking chops. Cook until done, about 10 minutes or so. 
Step 3: Pull pan out of oven and top chops with sauce. Serve immediately.
