Happy National Mac n Cheese Day!  We know wine and cheese go great together, so why not pasta with cheese sauce?  Celebrate the day today with a nice dish of Mac n Cheese anyway you like it and a bottle of wine.  

Off-Dry Riesling is great with Mac n Cheese.  The saltiness in the cheese balances the wine and the acidity in the Riesling refreshes your palate. Try Free to Be dry Riesling from South Africa or if you like your Riesling a bit sweeter, try the Willamette Valley Vineyards Riesling,  

Sparkling Dry Lambrusco....yum!  I think  this wine is great with anything and is just a fun wine.  Although this wine is light and slightly bubbly it has light tannins.  The cheese softens the tannins and the bubbles keep your palate clean and ready for the next bite!  Try the Vecchia Modena Sparkling Lambrusco.  

Un-oaked to lightly oaked Chardonnay is classic with lobster or crab, white cheese sauce Mac n Cheese.  You had me at Lobster and Crab, then add white sauce and noodles, I am all in!  Try the Hoopla un-Oaked Chardonnay or the Petit Chablis.   

Red Wines work with Mac n Cheese especially if you add meat to your noodles.  It does depend on what type of cheese the noodles are made with.  Cheddar cheese:  Cabernet or Merlot works well.  Smoked Gouda cheese, try a shiraz.  Of course Pinot Noir goes with just about anything and is always a good "go to" wine with most types of cheese sauces..  The theory behind a red wine pairing is that the high bitterness (tannin) will be balanced out by the salt and fat in the macaroni.  Try the Hoopla Cabernet or the Resplendent Pinot Noir.  

So, no matter how you like your Mac n Cheese there is a wine that will complement the dish.  Enjoy!
