September Vino Mas Wine Club: Wines from Italy

This month we are drinking the wines of Tuscany, Italy.  The main wine is a Sangiovese blend and the white is a Italian Blend.  The red Compliment wine is from the Chianti sub-region, Colli Senesi.  Sangiovese is the main grape in both the reds this month.  Sangiovese is Italy's most-planted grape variety and is key to most of the best wines in Tuscany.   

The Achille Rosso is nice and fruity with just a bit of spice.  I made a Chicken Mushroom Lazone (Thanks to Betsy Belmont for the suggestion!) to pair with the wine.  Even though this is a white sauce, it has chili powder and pepper in the spice mixture, which brings just a hint of heat.  There are also mushrooms in the dish which adds some earthiness.  This wine is fermented in stainless steel tanks and shows a lot of fruit on the palate.  The combination of the spice mixture, mushrooms and chicken complement this Sangiovese blend.  
 
The Italian white blend has nice scents of stone fruits and melon. The wine is fresh, savory and has nice acidity on the palate.  Many of us have tomatoes and cucumbers that are ripening at a pace that is hard to keep up with. The caprese salad recipe can be made with only tomatoes and cucumbers to use up some of what you have OR you can put the mixture over a bed of lettuce.  Either way you serve it, this salad is delish with the wine!  

I paired the Chianti with poached Salmon steaks. For the poaching mixture, I used the chianti as the red wine that is called for in the recipe.  All the ingredients are added to the poaching sauce, which melds the flavors together.  I plated this with a long grain rice, the poaching sauce was fantastic over the rice.  You can use other types of fish like Sea Bass and Steal Trout too.  You can change up the type of olives and use a white wine instead of red and change the overall taste of the dish.  Anyway you make it, this was so easy to prepare, so amazingly tasty and is a recipe that I will use over and over again.

Achille Rosso
NOTES:  Intense ruby red color. An intense and fruity bouquet. More evident are the accents of mature red fruit, cherries and blackberries. Achille is very round, sweet and soft in the mouth which make is so delicious and easy to drink. The finish is characterized by a persistent flavor, a very inviting wine.

Bindo Toscana Bianco
NOTES:  White paper color with golden reflections. It has an intense bouquet, with hints of peach, melon and pear. In the mouth it is fresh and savory with good acidity. Wine to drink young in order to better savor its freshness.

Chianti Colli Senesi DOCG
NOTES: Ruby-red in color, the wine is very fresh and pleasantly rounded. An elegant bouquet with intense fresh fruit aromas and floral hints. Brings to mind cherries, strawberries, pink grapefruit and violets. Well-structured, soft and harmonious. It is meant to be drunk young in order to appreciate its freshness and its bouquet.
