VIno Mas June Wine Club - In Sheeps Clothing Wines
06/03/2025
The main wine this month is a Pinot Noir and the complement red is a Cabernet. The recipe that I paired with these wines are one in the same, they both paired beautifully with the dish. I made Beef Greek style burgers with a feta olive sauce. The burgers have oregano, cumin and mint in the mix. The Pinot Noirs acidity and fruit notes cut through the richness of the burger, and its earthy qualities complemented the herbal flavor of the meat. The Cabernet went well also, Its dark fruit and integrated tannins popped against the earthiness of cumin, oregano, beef along with the char of the grill. I served the burger with Naan on the side and a Greek style salad. You can serve the burger with anything that you want, but trust me, you do not want to skip the olive feta sauce, it was amazing and totally elevated the burger. The burger, olive topping sauce and side salad were perfect for a nice night on the deck while sipping wines from "In Sheep's Clothing"!
Deb paired the Pinot Grigio. "Fresh and fast is the tagline for this recipe pairing. I love vegetables summer and in my opinion they make everything better! In Sheep's Clothing Pinot Grigio is crisp and clean with slightly less acidity than ones out of Italy, but just enough to match the acidity of shrimp scampi. The peach, lemon and honeysuckle notes in the wine are so well blended that no one flavor overpowers the other. The wine has some minerality so I tossed in pan seared yellow and zucchini squash and mushrooms. It gave the scampi extra texture and nutritional value (always a bonus!) Really, this could be a staple wine that easily pairs with many of your summertime favorite fresh recipes!"

The palate is supple and silky, offering a harmonious balance between its juicy red fruit core and refreshing acidity. Subtle oak influence adds gentle nuances of clove and toasted almond, while soft tannins provide a smooth, lingering finish.

TASTING NOTES: Crisp and refreshing, the In Sheep’s Clothing Pinot Grigio showcases aromas of green apple, pear, and lemon zest, with subtle hints of white flowers and wet stone. On the palate, it is bright and lively, featuring flavors of ripe peach, Meyer lemon, and a touch of honeysuckle, balanced by a clean minerality and a mouthwatering acidity.
Tasting notes: The Bledsoe Family Winery Cabernet Sauvignon offers a rich and complex flavor profile, with notes of dark fruit, subtle hints of oak, and a long finish. It as showcasing cassis, blackberry, dark chocolate, and dried figs, with a mouthfeel that is "ultra silky".
The uniqueness and diversity of the Walla Walla Valley is unlike anything in the world. Drew Bledsoe having a Quarterback career in the NFL (New England Patriots, Buffalo Bills and Dallas Cowboys) was the realization of a childhood dream, but somehow, he couldn’t deny the pull of his roots back to his hometown. Drew and his wife Maura, along with their team, are excited to celebrate this special place with you by sustainably crafting the purest expression of Cabernet with each vintage. We hope you enjoy!

In Sheep's Clothing Cabernet:
TASTING NOTES: In Sheep’s Clothing Cabernet Sauvignon delivers a ripeness of fruit flavors while preserving the acidity that gives the medium to full body wine a slice of freshness. Layers of Cassis, Blueberries, and Black Cherries lend to New World style fruit with more of an Old World structure with a hint of wood smoke. This wine fully embraces an integral part of classic Cabernet Sauvignon by highlighting a complex blend of dried herbs: anise, thyme and bay leaf.www.vinomas.com/Summer-Shrimp-Scampi-paired-with-In-Sheeps-Clothing-Pinot-Grigio
