Le Ferme Du Mont: Vintage after vintage, we renew the tradition of the lasting bond between extraordinary grapes and their unique soil to produce wines of excellence.
Inspiration: At the beginning of our story, there is a certain idea of ​​wine and life, then plants, stones, fields, first rays, water and light return us to the origin of smells and flavors.
Fruit day: A simple place with good vibrations. Our plants live in permanent equilibrium in the middle of a biotope rich in different species. The grape takes up most of our time and it is indeed the main goal of our work: to give the healthiest fruits, the most balanced in harmony with the plant.
Everything is harmony: harmony of the natural environment, harmony of fruit, harmony of juices, harmony in breeding.

Our wines this month are from Côtes du Rhône which is in Southern France. All three wines, 2 reds and 1 white are all blends, which is typical from this region. I paired the main red and the white this month and Deb is pairing the second red. Recipes for the main red and white are below.

The Salmon with Blackberry-Wine Sauce is simple and elegant and was so good with the Le Ponnant. A Syrah blend is typically not used with seafood, but it worked perfectly on this salmon dish. The blackberry wine sauce is wonderfully savory, especially when you add fresh herbs, yet sweet, and is a slightly acidic sauce. It enhanced the salmon and is a definite winning combination. As a note: My sister in law was in town the night I made this, she had a friend with her that commented that she has never liked Salmon, but she LOVED this dish. It is a winner and she even asked for the recipe.

I paired the La Ferme Du Mont La Truffiere with a Zucchini, Artichoke, Lemon pasta. The pasta is fresh with seasonal veggies. The wine is bright, flavorful and has a pleasant minerality that is mouthwatering. The acidity in the wine cut through the creaminess of the cheese and cream. The lemon notes in the wine brought out the flavors of the artichokes, zucchini and fresh herbs. This dish is Vegetarian but if you omit the cheese or use Vegan cheese, you have a vegan dish.

Deb paired the Mademoiselle Du Mont Red Blend with Braised Beef Tips in Red Wine. She adapted the recipe from "Kevin is Cooking - Life is too short to be bland". This dish with this wine was anything but bland. Hearty beef dishes and wines from France, are classic pairings. The fruity, earthy flavors of the wine brought out the rich flavor of the beef tips. Yum!

«Le Ponnant» Côtes du Rhône Villages
  • NOTES: In a dark red color, our Côtes du Rhône Villages exudes notes of very ripe fruit, black cherry, conifer, olive and black licorice. The bay and pepper notes complete the aromatic palette. The palate is marked by the sweetness of the fruit and the sweetness of the tannins placed on a regional freshness giving it finesse and elegance. 60% Grenache and 40% Syrah

«La Truffière» Côtes du Rhône blanc
  • NOTES: Jade color, melted in a golden blonde, the nose offers us a floral and mineral bouquet. The widh and opulence of its scent prepares us for a complex mouth. The palate is surprised by the amplitude of the sensations between smoothness and elegant nervousness. The floors are multiple, quince paste, yellow-fleshed fruit, spices, acacia honey, limestone minerality. The general impression in its power and its balance is positioned equidistant between the great white wines of the Rhone and those of the south of Burgundy. A Blend of Roussanne, Marsanne, Viognier, Grenache blanc and Clairette.

Mademoiselle Du Mont Côtes du Rhône
  • NOTES: Brilliant ruby red in color. The nose reveals a gourmet bouquet of red fruits and spices. On the palate, the wine is ample and harmonious. The finish is fine and sapid. 60% Grenache, 15% Syrah, 10% Mourvèdre, 5% old Carignan
