Catalan cooks have long added bittersweet chocolate to savory dishes for earthy depth of flavor. This combination of seafood and chocolate offers a perfect balance to the richness in the sauce and subtle sweetness from tender shrimp. The Pavette Pinot Noir is fruity and easy drinking, pairing the Shrimp and chocolate work well with this wine.

Crispy Cauliflower shines in the salad I paired with the Sauvignon Blanc bringing the cold-weather garden to the table. The ranch dressing smooths the bitter edges of the cauliflower making the salad more wine friendly. Paired wit the Pavette Sauvignon Blanc, it will keep us dreaming of the warmer weather that is just a few months away.

Seasoned with a cocoa rub, finished with a butter-cocoa mixture, and drizzled with red wine sauce, pan-seared steaks are a special way to make steak in this Valentine month. When combined with sweet paprika, allspice, and cayenne pepper, the cocoa powder offers a delicious, rounding earthiness in the spice rub. The Chocolate and the spices offer a depth of savory flavor that heightens the meatiness of the steak. The Pavette Cabernet is on the fruity side, which makes it a good pairing for anything Chocolate.
