The main red this month is the Requiem Cabernet, I paired this with Lamb Chops with Frizzed herbs. Lamb and Cabernet Sauvignon are a classic pairing because the wine's bold flavor and high tannins cut through the richness of the meat. The intensity of a full-bodied Cabernet, which the Requiem is, stands up to the strong, savory flavors of lamb. My herb garden is beyond overgrown and I can't keep up with using all of it, not that I am complaining. Taking any type of fresh herbs you like, this dish specifically used lots of sage, you just cut the herbs up and sauté them in a bit of Olive Oil and minced garlic. The herbs were amazing on the lamb, but would be great on steak, pork, chicken or even hamburgers. I paired with this with the Cab but it would also be great with the complement red Ruah, too.
When it comes to versatile and delightful white wines, Albariño stands out. Our weather the last week has been amazing and called for a light, quick meal to make and enjoy outside on the deck. I put together a tomato, shrimp, and avocado salad, which is a classic pairing for Albariño. Its crisp acidity and vibrant fruit notes made it an excellent choice for pairing with seafood and the wine's vibrant acidity and citrus notes perfectly complemented the seafood and cut through the richness of the avocado. I dressed the salad with a basil, lime vinaigrette. This salad can be served as a side, or a light lunch or dinner and with or without the shrimp. The lime basil dressing would be great as a marinade for Chicken or a topping for seafood.
