The Cabernet and the Chardonnay are both un-oaked. The Cab is light and easy drinking and will be great for outside warm weather drinking. It is good with a little chill on it and will pair with burgers, brats and pizza's on the grill. I paired it with individual mini Italian meatball mushroom pesto pizzas that I grilled; the wine was a "lovely" pairing: The savory undertones of the wine tasted great with the herb notes from the pesto and the meatballs.
The Chardonnay is crisp with citrus and apple notes. I paired this with a shrimp, pea and potato dish.
The Carignan is the red compliment this month. This is a red grape that originated in Spain and is planted all around the globe, however, it is a grape that tends to be blended with other red varieties. The Omerta is 100% Carignan. I paired this with a Puttanesca. It was wonderful with the dish. The olives, capers and Unami notes of the anchovies brought out the herbal notes in the wine, the red pepper that was added to the dish complimented the ripe fruit flavors of the wine. The dish was super easy to make and so flavorful.

Blackwater Omerta Carignan
NOTES: Pungent aromas of dark plums, cherry liqueur, cassis, peppery spices and wild herbs. It is intense and medium-bodied on the palate with darker plum notes emerging with a tough of herbal tones, dried flowers and a fresh leather boot. The finish is lifted by hidden acidity and the wine has great persistence. Only 125 Cases Made
