Smash Burger with The Vice Cabernet

INGREDIENTS:
  • 2 lbs ground beef
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp all purpose seasoning
  • ¼ cup shredded cheddar 
  • 1 egg
  • 4–8 slices American cheese
  • 4 soft burger buns (brioche or potato buns work great) that are spread with butter on the cut sides, then toasted  on the grill,
Optional toppings: lettuce, pickles, grilled onions

In-N-Out Sauce
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp white vinegar
Directions for Sauce: 
Step 1: Combine all sauce ingredients and let sit until ready to put on cooked burgers. 

Directions for Burgers:  

Step 1: Heat Grill
Step 2:
Divide hamburger into four pieces and form into loosely formed balls. 
Step 3: Place ball of hamburger on hot grill.
Step 4: Cover with a piece of parchment paper and press down with a large spatula or bacon press.
Get the patty as thin as you can.
Step 4:  Sprinkle with seasoning. Cook for 2-3 minutes.
Step 5:  Flip with spatula making sure to scrap up the crusty skin that has formed on the underneath side.
Step 6: Cover with slice of cheese. Cook for 1-2 more minutes until cheese melts.
Step 7: Place on toasted bun with desired condiments.
